So, at long last , we have succumbed to the pressure and printed a cookbook that includes our most popular breakfast recipes.
6 eggs 1/2 red bell pepper, diced finely
1/4 cup chives, chopped
1/2 + cup crumbled feta cheese
Cayenne, salt & pepper
3 T. butter
1. Preheat oven to 350.
2. Whisk eggs well so frtitata is fluffy.
3. Add remaining ingredients to egg mixture (except butter). Mix together. Be sure to use plenty of Feta cheese. It gives the frittata body.
4. Melt butter in a 12" omelette pan. Add egg mixture. Cook briskly without moving it for about a minute. Place pan in oven for approximately 15 mins.
(It is done when center if not loose)
Frittata can hold for a few minutes at room temperature.
